Message your purchasing the car in and those of your home state. As far as what I would do (and have done myself), I would arrange for insurance ahead of time and have the owner sign the title over to me when I paid for the car. Then I would jump in my new car and drive home. And if it's a TT, I'd try to get that goofy smile off my face.

I would not switch plates because, if you are stopped, the car linked to those plates is different than the one you just bought--very suspicious and definitely illegal. I bought a car in Texas, drove it home 2000+ miles to Washington State, and all I did was have it insured ahead of time and have the signed over title with me in the car. I was stopped in New Mexico by the SP (what for? Surprise, speeding) and the NMSP didn't care that the car wasn't licensed to me. The only thing they cared about was issuing me a ticket.

IMO, if you buy a car, have it insured and have a signed over title with you, as long as the car is not reported stolen, I don't think you have a thing to worry about on the way home. But check applicable state laws just to be on the safe side.
